Description
Rich roasted cauliflower mashed with onions and garlic
Ingredients
- 1 lb cauliflower, chopped into florets
- 1T coconut oil, melted
- 2 T butter/ghee
- 1 sweet onion
- 2 cloves garlic, crushed and chopped
- 3 T coconut cream
- salt and pepper to taste
- Garnish: green onions, bacon, cheese
Instructions
- Place cauliflower in a bowl coat with coconut oil
- Spread cauliflower on a baking sheet lined with parchment, add salt and pepper
- Roast cauliflower at 425 until cooked through (~20 minutes) and tips are caramelized
- In a saute pan, saute onion in butter/ghee, add a pinch of salt and pepper
- When onion softens, add garlic. Saute until onion is translucent
- Place roasted cauliflower and onion/garlic in blender or food processor. Add coconut cream, blend until smooth. Add salt and pepper to taste
- Serve fresh or refrigerate/freeze for use later. To reheat, bake at 350 until heated through
- Garnish as desired! I recommend letting each person add their own toppings!
Notes
Dairy Free: although ghee does not have milk proteins, you can substitute coconut oil for butter/ghee or your own butter substitute
For an extra zing, add a teaspoon of lemon juice to green onions before stirring in!
If your family is sensitive to garlic, use just 1 clove garlic
