Description
A fruit-sweetened blueberry muffin that has no added sugar and tastes AMAZING!
Ingredients
Scale
- ½ c applesauce, unsweetened
- 2 c blueberries
- 8 oz dates, pitted
- ½ c butter/ghee
- 1 T vanilla
- 3 eggs
- 2 c flour (Gluten Free see below)
- 1 t baking powder
- ½ t baking soda
- 1 t salt
- ¼ t nutmeg
Instructions
- Combine blueberries and applesauce in a small bowl, set aside
- In a large bowl, combine flour (xanthan gum if gluten free), baking powder, baking soda, salt and nutmeg
- Check dates for pits.
- In a food processor or blender, add dates, butter/ghee, eggs, and vanilla. Process/blend until combined and date pieces are small
- Transfer to large bowl with dry ingredients, mix until combined
- Gently fold in blueberries
- Line muffin pan with muffin cups, spoon batter into cups
- Bake at 350° for 18-22 minutes for mini-muffins, 22-28 minutes for large muffins or until golden brown on top
Notes
Gluten free: I think plain oat flour is the easiest gluten free transition. The muffins need xanthan gum to help them stick together:
* 2 c oat flour, lightly packed (240g)
* 1 t xanthan gum
Dairy Free: use your favorite butter substitute, coconut oil or avocado oil
