Healthy blueberry jam sweetened completely with fruit
18 oz pack of fresh blueberries
½ c applesauce (unsweetened)
1 T arrowroot powder
1 T water
Rinse blueberries and allow to drip dry
Puree blueberries in a blender (optional, you can cook jam longer and mush blueberries to keep more of the insoluble fiber in tact)
Add blueberries and applesauce to a sauce pan over medium heat
In a small container, add arrowroot powder and water. Shake vigorously and add slurry to sauce pan
Bring to a simmer, stirring frequently.
When jam is thickened and darkens to a deep purple, it is done! (It will thicken more as it cools!)
Pour into a heat-safe container and put in fridge.
