Description
Healthy blueberry jam sweetened completely with fruit
Ingredients
- 18 oz pack of fresh blueberries
- ½ c applesauce (unsweetened)
- 1 T arrowroot powder
- 1 T water
Instructions
- Rinse blueberries and allow to drip dry
- Puree blueberries in a blender (optional, you can cook jam longer and mush blueberries to keep more of the insoluble fiber in tact)
- Add blueberries and applesauce to a sauce pan over medium heat
- In a small container, add arrowroot powder and water. Shake vigorously and add slurry to sauce pan
- Bring to a simmer, stirring frequently.
- When jam is thickened and darkens to a deep purple, it is done! (It will thicken more as it cools!)
- Pour into a heat-safe container and put in fridge.
