A HEALTHY Banana Muffin Sweetened Completely with Fruit!!!
I love using my ripe bananas and turning them into something delicious!
But most banana muffin recipes have a TON of sugar… I wanted to create a HEALTHY banana muffin recipe that I would feel good about giving to my kids… I sweetened these muffins with dates and bananas–NO ADDED SUGAR!
Yes, having a healthy muffin with no added sugar is nice, but do they taste good? Will my kids actually eat them???
Ummm, yes! They are delicious! My kids love to snitch muffins as they walk by! My daughter Ella is so adorable–she loves to snitch one and hide under the counter while she eats it! She thinks she is sneaking something so decadent and unhealthy that she wants to hide from me–little does she know that they are healthy and that I don’t mind the occasional snitch! (Actually, I am just as guilty! They are so good that I sneak one as I walk by!)
If that is not an endorsement for these muffins, I don’t know what is!!!
I make mine gluten free, but don’t worry if you are not gluten free–I wrote the recipe to be adaptable–you can use either regular flour or gluten free!
These muffins are so delicious–your family will never know they are healthy!
Healthy banana muffins sweetened completely with fruit!
8 oz pitted dates
½ c butter/ghee
1 T vanilla
4 ripe bananas
2 c flour (gluten free see notes)
½ t baking soda
1 t baking powder
1 t salt
In a large bowl, combine flour (xanthan gum if gluten free), baking powder, baking soda, and salt
Check dates for pits.
In a food processor or blender, add dates, butter/ghee, eggs, vanilla and banana. Process/blend until combined and date pieces are small
Transfer to large bowl with dry ingredients, mix until combined
Line muffin pan with muffin cups, spoon batter into cups
Bake at 350° for 23-28 minutes for large muffins, 20-25 minutes for mini-muffins or until golden brown on top
Gluten free: I think plain oat flour is the easiest gluten free transition! You need xanthan gum to make the muffins stick together * 2 c oat flour, lightly packed (240g) * 1 t xanthan gum
Egg allergy: use flax egg 3T flaxmeal ½ c water make as first step, set aside and allow to thicken. Add when recipe calls for eggs
Dairy free: substitute coconut oil or avocado oil for butter

These Fruit Sweetened Banana Muffins are sweetened with dates and bananas. There is NO added, refined or concentrated sugar!!! Added sugar spikes blood sugar and overwhelms the liver and is stored as fat.

Butterfat or ghee is actually not an unhealthy fat as we had been told for years–especially if it is from grass-fed cows… It is low in omega-6 fatty acids which promote inflammation and has omega-3 fatty acids which lower inflammation, and it is heat stable so it does not break down when cooking!
