Description
Healthy banana muffins sweetened completely with fruit!
Ingredients
- 8 oz pitted dates
- ½ c butter/ghee
- 3 eggs
- 1 T vanilla
- 4 ripe bananas
- 2 c flour (gluten free see notes)
- ½ t baking soda
- 1 t baking powder
- 1 t salt
Instructions
- In a large bowl, combine flour (xanthan gum if gluten free), baking powder, baking soda, and salt
- Check dates for pits.
- In a food processor or blender, add dates, butter/ghee, eggs, vanilla and banana. Process/blend until combined and date pieces are small
- Transfer to large bowl with dry ingredients, mix until combined
- Line muffin pan with muffin cups, spoon batter into cups
- Bake at 350° for 23-28 minutes for large muffins, 20-25 minutes for mini-muffins or until golden brown on top
Notes
Gluten free: I think plain oat flour is the easiest gluten free transition! You need xanthan gum to make the muffins stick together
* 2 c oat flour, lightly packed (240g)
* 1 t xanthan gum
Egg allergy: use flax egg
3T flaxmeal
½ c water
make as first step, set aside and allow to thicken. Add when recipe calls for eggs
Dairy free: substitute coconut oil or avocado oil for butter
